I'm not a big fan of coconut, but I loved this pie. The pineapple flavor really shines through.

The pie was a little too sweet for my taste, but I think that's just a personal preference. Otherwise, it was a great recipe.

I substituted gluten-free flour for the all-purpose flour and it still turned out great. The crust was a little more crumbly, but the filling was just as delicious.

Followed the recipe to the letter and it came out perfect. The chess filling was creamy and flavorful, and the pineapple and coconut added a nice tropical touch. Will definitely be making this again.
