This truly delectable dish is based on a dessert from Vietnam. The rice is simmered in pineapple juice and laced with lemon and brown sugar. It's at its best when served warm.

Steps:
- Add water to pineapple juice to equal 1 3/4 cups and place in a medium saucepan. Add lemon peel. Bring to a boil over medium heat.
- Stir rice into saucepan. When juice returns to a boil, cover, reduce heat to medium-low, and simmer 40 minutes, until most of the liquid has cooked out.
- Stir in pineapple, vanilla extract, and brown sugar. Mix well, cover and continue to cook 10 minutes more. Let stand, covered until serving time.
- Serve warm.
