Pintxo Gilda (Basque Pepper, Olive, and Anchovy Skewers) image

Gilda skewers are one of the most famous Basque pintxos (tapas). In Spain, they are made with anchovies, mancanilla olives (ideally stuffed with anchovies), and pickled piparra peppers, a Basque pepper, which are hard to find here. Use pepperoncini instead.

I substituted olives with capers and used sun-dried tomatoes instead of anchovies to make it vegetarian. It was a hit!

I wasn't sure about the anchovies, but they really made the dish. I'll definitely be making this again.
