POACHED CHICKEN BREASTS IN WINE image

Number Of Ingredients 9

4 (4 oz) skinned, boned chicken breast halves
3/4 cup dry white wine
2 1/2 cup sliced fresh mushrooms
2 Tbls chopped fresh parsley
1/2 teaspoon dried tarragon
1/2 teaspoon salt
1/4 teaspoon pepper
1 Tbls cornstarch
2 teaspoons water

Steps:

  • Place chicken between two sheets of plastic wrap; flatten to 1/4" thickness. Set aside. Combine wine and next 5 ingredients in a large skillet; bring to a boil over high heat. Arrange chicken in a skingle layer in skillet; cover, reduce heat, and simmer 15 minutes or until chicken is tender. Remove chicken to serving plate; keep warm. Combine cornstarch and water; stire into skillet. Bring mixture to boil; boil 1 minute, sitrring constantly. Pour sauce over chicken.
