BUTTER-POACHED CHICKEN WITH WINE SAUCE

Butter-Poached Chicken with Wine Sauce image

Poaching in a barbecue is a great way to treat more gentle meats such as chicken breast to get the smoke flavor but not dry it out.

Provided by Justin Gradon

Categories     Dinner     Main Dish     Sauce

Time 1h20m

Number Of Ingredients 7

1 pound butter
2 chicken breasts
2 cups white wine (such as a Chardonnay)
3 tablespoons whole grain mustard
2 cloves garlic (crushed)
1/2 cup heavy cream
salt and pepper (to taste)

Steps:

  • Preheat a BBQ or smoker to 200 degrees F (95 degrees C). Place a piece of plum wood in to add smoke to the chicken.
  • Place the butter in the skillet then place the skillet into the preheated BBQ. Leave until the butter is completely melted.
  • Add the chicken breasts to the butter. Cook and baste every 15 minutes until the chicken has an internal temperature of 165 degrees F (75 degrees C).
  • Remove the skillet from the heat and rest for 5 minutes in the butter to stop it from drying out.
  • Preheat a skillet over moderate temperature. Pour in the wine, it will steam a little and remove the 'boozy' flavor and alcohol. Bring to a simmer.
  • Add the mustard and garlic, then cook until the garlic has softened and becomes sweet and subtle.
  • Stir through the cream, mixing to incorporate well. If too thin leave on a very gentle heat to let it reduce to your desired thickness.
  • Taste the sauce and season with salt and pepper as needed.Tip: If you season before reducing the sauce it could cause it to become too salty.
  • Thinly slice the chicken and lay it on the serving plate. Spoon over the white wine mustard sauce then serve immediately.

Time 40m

Yield 4 salads.

Number Of Ingredients 11

1 pound skinless and boneless chicken breast
2 cups water
1/4 cup dry white wine
2 bay leaves
1 teaspoon whole white peppercorns
1 cinnamon stick
2 garlic cloves, crushed
2 jalapeno peppers, split and seeded
1 small onion, peeled and studded with 4 cloves
1 carrot, peeled and coarsely chopped
2 teaspoons coarse salt

Steps:

  • Tie the bay leaves, peppercorns, cinnamon stick and garlic together in a piece of cheesecloth as a sachet garni. Combine the water, wine, sachet garni and vegetables in a pot large enough to hold the chicken and bring to a boil. Reduce to a simmer and cook for 15 minutes, before adding the chicken breast, carefully skimming off any scum and grease that accumulates on the surface of the water. Cook the chicken at a strong simmer for 20 minutes. Turn off the heat and cool the chicken in the poaching liquid in an ice water bath. When thoroughly cold, remove the chicken breasts and keep meat refrigerated until ready to serve. Bouillon may be strained and saved and used within 3 days to poach again.;

WINE-BAKED CHICKEN BREASTS

Wine-Baked Chicken Breasts image

This fills the house with the most delicious aroma. I use skinless chicken breasts to cut fat and low sodium soy sauce to cut salt. It is very easy and is one the first recipes I made using wine. Use any good quality dry red wine that you enjoy drinking. Do not use wine labeled as a 'cooking' wine as it is likely to be a poor quality wine that has had salt added to it.

1 celery stick, roughly chopped
3 large garlic cloves
½ small bunch parsley
½ small bunch dill

Tips:

  • Choose the right wine: For poaching chicken, choose a white wine that is light-bodied and has a mild flavor, such as Pinot Grigio, Sauvignon Blanc, or Chardonnay. Avoid using wines that are too acidic or tannic, as these can overpower the delicate flavor of the chicken.
  • Use fresh herbs and spices: Fresh herbs and spices can add a lot of flavor to poached chicken. Some good options include thyme, rosemary, parsley, sage, bay leaves, and peppercorns. You can also add a few cloves of garlic or a thinly sliced onion to the poaching liquid for extra flavor.
  • Don't overcook the chicken: Poached chicken is best when it is cooked just until it is cooked through. Overcooking will make the chicken dry and tough. To check if the chicken is done, insert a meat thermometer into the thickest part of the breast. The chicken is done when it reaches an internal temperature of 165 degrees Fahrenheit.
  • Let the chicken rest before serving: After poaching the chicken, let it rest for a few minutes before serving. This will allow the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Poached chicken is a healthy and delicious dish that is easy to make. By following these tips, you can create a flavorful and tender poached chicken that your family and friends will love. You can also get creative with your poaching liquid by adding different herbs, spices, and vegetables. Experiment with different flavors to find the perfect poached chicken recipe for you.
