Forty years ago I made this casserole for a friend of mine and she decided it should be called Poor Man Stew. My aunt is responsible for the original recipe and she always called this Five Layer Casserole because of the five layers. Number Of Ingredients 8

1 - 1/2 lb ground beef
1/2 c onion, chopped
1 can(s) tomato soup
1 can(s) cream of mushroom soup
2 c fresh carrots, peeled and chopped
4 c raw potatoes, peeled and chopped
1/2 c milk
pepper, freshly ground

Steps:

  • 1. Preheat oven to 350 Brown beef and onions, drain excess grease and layer on the bottom of a heavy duty dutch oven (with lid)
  • 2. Spread undiluted tomato soup over top beef and onion
  • 3. layer peeled, cut carrots over top of tomato soup
  • 4. Add bite sized cut, peeled, potatoes over top of carrots
  • 5. Mix milk with mushroom soup and pour over potatoes Season with fresh ground pepper Cover and bake until vegetable are tender
