Potato Cake image

Sprinkle the top with powdered sugar and you'll be thrilled with this delectable, lovely cake! Mashed potatoes... who knew?!

2 c sugar
3/4 c butter or margarine
1 c hot mashed potatoes
1 c cocoa
1 tsp ground cloves
1 tsp nutmeg
1 tsp cinnamon
1 c walnut pieces
4 eggs, divided
1/2 c milk
2 c flour
2 tsp baking powder
1/2 tsp salt

Steps:

  • 1. Cream together the butter and sugar.
  • 2. Add the egg yolks and milk and beat.
  • 3. Add in the chocolate and hot mashed potatoes.
  • 4. Add the flour, baking powder and spices and salt, and then the nuts, and beat.
  • 5. Beat the egg whites and then fold them into the batter.
  • 6. Spread in a square pan and bake at 350 degrees for one hour or until cake is done.
