This is a pleasant change from regular Lasagna. I got this recipe from Alsum Farms.

Time 55m

Number Of Ingredients 13

2 Tbsp olive oil
2 clove garlic, minced
1/2 tsp salt
1/2 tsp pepper
5 large 5 baking potatoes, sliced 1/4 inch thick
1 lb ground beef, lean
1 large onion, chopped
1 tsp italian seasoning
1 26 ounce jar pasta sauce (any flavor)
1 15 ounce container ricotta cheese
1 10 ounce package chopped spinach, thawed and drained well
2 c (8 ounces) shredded mozzarella cheese
2 Tbsp parmesan cheese, grated

Steps:

  • 1. Preheat oven to 425 degrees. In a large bowl, combine oil, garlic, salt and pepper. Add potatoes and toss to coat. Spread in an ungreased 15 by 10 inch baking pan. Cover tightly with foil. Bake for 35 to 40 minutes, or until tender. Let cool for 15 minutes. Reduce oven to 350 degrees. In a large skillet, brown beef with onions and seasonings; drain well. Add pasta sauce and simmer on low for about 10 minutes. Stir together ricotta and spinach. Arrange 1/3 of potatoes evenly in a greased 9 by 13 inch baking dish. Layer with 1/2 of spinach mixture, 1/3 of meat sauce and 1/3 of mozzarella. Repeat the next layer with 1/2 of spinach mixture, 1/3 of meat sauce and 1/3 of mozzarella. Top with remaining potatoes, meat sauce and mozzarella. Sprinkle with parmesan cheese. Bake uncovered for 35 to 40 minutes or until bubbly. Let stand for 5 minutes before serving. Makes 8 to 10 servings.

I'm allergic to potatoes. Can I use a different vegetable instead?

Has anyone tried this recipe with a different type of cheese? I'm thinking about using mozzarella instead of cheddar.

I'm not sure about this recipe. It seems like it would be a lot of work.

I followed the recipe exactly and my lasagna turned out dry and overcooked. I'm not sure what went wrong.

This potato lasagna was a little bland for my taste. I think I would add more garlic and oregano next time.

I've made this potato lasagna several times and it's always a crowd-pleaser. It's a great way to use up leftover potatoes and it's always a hit at potlucks.

I'm not a huge fan of lasagna, but this potato lasagna was surprisingly delicious. The potatoes were cooked perfectly and the cheese was gooey and flavorful. I would definitely recommend this recipe.
