This is my mother's Puerto Rican gazpacho salad recipe. I've been eating it since I was knee-high to a grasshopper. It's good and very easy to make.

This salad was a bit bland for my taste. I added some chopped jalapeño and cilantro to give it a little more kick.

I found that this salad was a bit too acidic for my taste. I added a little more sugar to balance out the flavors.
