QUICHE SUPREME image

Pastry for a 9 inch pie shell
4 eggs beaten
1/2 pound fresh mushrooms, sliced
1/4 cup sliced green onions
1 tablespoon butter
1 cup (4 oz) shredded swiss cheese
1 cup half and half, light cream, or milk
1/4 cup grated parmesan cheese
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Roll out pastry and fit into a pic pan. Brush the inside of the pie shell with a small amount of the beaten eggs. Prick bottom and sides with fork. Bake at 450 degrees for five minutes or until light golden brown. Set pie shell aside. Reduce oven temperature to 375 degrees. Saute mushrooms and onion in butter until mushrooms are golden brown and onion is tender - 6-8 minutes. Stir together onion, mushrooms, and swiss cheese. Put into pie shell. To the beaten eggs, add remaining ingredients. Beat until well blended. Pour over mushroom mixture. Bake at 375 degrees for 35-40 minutes until knife inserted in center comes out clean. Let stand 5 minutes before serving.
