Steps:
- In a bowl, whisk together sugar, oil, apple juice and eggs for about 2 minutes or until lightened in colour. In a separate bowl, stir together both flours, cinnamon and baking powder. Gently whisk wet ingredients into oil mixture, mixing just until combined. Fold in apples. Scrape batter into prepared pan (8 x 4 inch loaf pan) or smaller 5x3 pans. Bake in centre of preheated 350 F oven for 35 to 40 minutes or until tip of loaf springs back when lightly pressed. (Smaller loaves with take between 25 to 30 minutes) Remove pan to wire rack to cool completely. Cinnamon Glaze: in small bowl, whisk together icing sugar and water until thick but still pourable. whisk in cinnamon. remove loaf from pan. using tines of a fork or a knife, drizzle glaze over loaf.
