I whipped this up on the fly to toss with a salad of field greens and sliced peaches. Easy, light, and fruity. One batch makes enough for one big salad bowl. This vinaigrette can also be blended in a food processor.

I'm not a huge fan of strawberries, but I actually really enjoyed this vinaigrette. The sweetness of the berries is balanced out by the tanginess of the vinegar.

This vinaigrette is a great way to use up leftover strawberries. I always have a few extra berries in my fridge, and this is a great way to use them up.

I found that the dressing was too thick. I had to add some water to thin it out.
