Raisin Broccoli Salad image

Years ago, I needed a colorful dish for my menu and created this salad. I experimented with the dressing until the combination was a success. This is a great make-ahead salad. -Pat Faircloth, Lillington, North Carolina

Number Of Ingredients 9

4 cups broccoli florets
1 cup chopped green pepper
1 cup sliced carrots
1 cup raisins
1 cup chopped walnuts
1 medium onion, chopped
1 cup mayonnaise
1/2 cup sugar
1/4 cup white vinegar

Steps:

  • In a large serving bowl, combine the first six ingredients. In a small bowl, combine the mayonnaise, sugar and vinegar until smooth. Pour over vegetable mixture and toss to coat. Cover and refrigerate for at least 1 hour or until serving.

This salad is a great way to use up leftover broccoli. It's also a healthy and refreshing side dish that's perfect for summer.

I'm not a huge fan of raisins, but I decided to try this salad anyway. I'm glad I did! The raisins added a nice sweetness that balanced out the tartness of the dressing. I'll definitely be making this again.

Followed the recipe exactly and it turned out great! The only thing I would change is to add a bit more salt and pepper to taste.
