RED WINE APPLESAUCE image

Yield 3 cups

Number Of Ingredients 6

6 Granny Smith apples (about 2 1/2 pounds)
1/4 cup sugar
1/4 teaspoon cinnamon
1/2 cup dry red wine
3 tablespoons creme de cassis
Pepper to taste

Steps:

  • Peel and core apples; cut into large wedges and combine in saucepan with all other ingredients. Bring mixture to a boil and simmer, covered, 15 minutes or until tender. Remove cover and simmer until most liquid is evaporated, about 5 more minutes. Mash with a potato masher, leaving some chunks. Transfer to a bowl and chill overnight.
