Crust
1 1/2 c. flour
1/4 c. sugar
1/2 t. salt
1 t. baking powder
Fruit Topping
4 c. rhubarb, chopped
1/2 c. sugar
Topping
3/4 c. sugar
2 T. flour
2 T. butter
1/8 t. nutmeg
1 T cinnamon

Steps:

  • Preheat oven to 350. Mix crust and pat into a 9x11 pan. Mix rhubarb and sugar together. Spread on top of crust. Mix dry topping ingredients. Sprinkle on top of fruit. Bake for 45 minutes.

I was a bit hesitant to try this recipe because I'm not a huge fan of rhubarb, but I was pleasantly surprised. The kuchen was delicious! The rhubarb was tart, but not too sour, and the crust was flaky and buttery. I would definitely make this again.
