Ricotta Gnocchi image

Serve with your favorite sauce or in a chicken based soup like escarole or wedding soup! From my own family's personal recipe!

Number Of Ingredients 3

1 lb ricotta cheese
2 c flour
1 egg

Steps:

  • 1. Using your hands, mix the cheese, egg & flour in small amounts until you have a soft pliable dough.
  • 2. Roll dough into 1/2" ropes, cut each rope into 3/4" pieces. Then using your thumb, roll each piece down the smooth side of a hand grater for the characteristic bumpy pattern on one side and dimple on the other.
  • 3. Cook in salted boiling water and when they float to the top they are done. Then can also be frozen in airtight bags.
