Salmon & Crab Meat Croquette image

My family loves this recipe. I usually make this on Friday's after a long week from working. It is quick and easy dinner. I make it with some vegetables and that's it! My dear mother, who passed away, used to make this recipe but I revised it to a healthier version. Enjoy everyone!

Number Of Ingredients 16

1 can(s) 14.75 oz salmon without bones and skin
4 oz imitation crabmeat
2 large eggs
1 tsp lemon juice
1 tsp honey mustard
1/2 tsp worcestershire sauce
1/4 c chopped green peppers
1/4 c chopped red peppers
1/4 c chopped onions
1/3 c chopped scallions
1 c italian bread crumbs and some for coating
1/2 c corn meal
1/4 c shredded sharp cheddar cheese
dash(es) salt and pepper
dash(es) old bay seasoning
1/2 c olive oil

Steps:

  • 1. In large bowl mix the above ingredients together. Except the Olive Oil.
  • 2. Form into balls and pat down. Makes about 7 croquettes. Coat with Italian Bread Crumbs.
  • 3. Put Olive Oil in Non-stick Fry pan. Heat Olive Oil Medium to Low Heat then place the 7 croquettes in hot oil.
  • 4. Cook approximately 2 to 3 minutes on each side until golden brown. Drain on Paper Towel.

The only thing I would change about this recipe is to add a little more seasoning to the filling. Otherwise, they're perfect!
