Salmon Loaf image

An easy, delicious meal. True comfort food. Serve with a white sauce.

Number Of Ingredients 8

1 can(s) (1 pound) red salmon
1 c cracker crumbs or ritz cracker crumbs or bread crumbs
2 eggs, slightly beaten
1/2 c chopped onion, sauteed
1/2 tsp mustard
salt and pepper to taste
1/4 c chopped green pepper (optional)
1 can(s) (10 ounce) cream of celery or cream of mushroom soup

Steps:

  • 1. Drain salmon; save 1/4 cup liquid. Remove skin and bones from salmon, flake.
  • 2. Thoroughly mix salmon with salmon liquid and other ingredients; pack into a greased loaf pan.(9X5X3) Mixture is soft before baking.
  • 3. Bake at 375 degrees for 1 hour or until browned. Cool loaf in pan for 10 minutes; loosen sides of pan and turn out on platter.
