SAUSAGE STUFFED ACORN SQUASH image

Number Of Ingredients 12

1 acorn squash
1/2 lb chicken/feta/spinach or other sausage
1/4 c chopped celery
1/4 c sliced mushrooms
1/4 c chopped red pepper
1/8 c chopped onion
1 egg, beaten
1/4 c sour cream
1/8 c Parmesan, grated
salt to taste
sour cream
Parmesan cheese

Steps:

  • 375 degrees, roast squash face down - 30-45 min Cook meat and veggies. Combine egg sour cream and parm - add to meat mixture. Fill squash - bake 25 minutes.
