Yield Serves 6

Number Of Ingredients 6

3 tablespoons red-wine vinegar
2 garlic cloves, minced
2 teaspoons freshly grated lemon zest
1/2 cup olive oil
3 pounds large boiling potatoes (about 6), peeled, sliced 1/4 inch thick, and patted dry
1/3 cup minced fresh parsley leaves, preferably flat-leafed

Steps:

  • In a small saucepan combine the vinegar, the garlic, the zest, and salt and pepper to taste, bring the mixture to a boil, and simmer it for 2 minutes. Remove the pan from the heat and whisk in 1/4 cup of the oil. In each of 2 large skillets heat 2 tablespoons of the remaining oil over moderately high heat until it is hot but not smoking and in it cook the potatoes in one layer in batches over moderate heat, turning them, for 10 to 15 minutes, or until they are golden brown on the outside and tender within. Transfer the potatoes to a serving dish, pour the garlic mixture over them, and toss them with the parsley.

This dish was a bit too salty for my taste, but the potatoes were crispy and the sauce was flavorful. I would make this dish again, but I would use less salt.

The potatoes were a bit bland, but the sauce was very good. I would make this dish again, but I would add more seasoning to the potatoes.

This dish was easy to make and very flavorful. I used Yukon Gold potatoes and they turned out perfectly. The sauce was also very good. I will definitely be making this again.

The potatoes were a bit too crispy for my taste, but the sauce was delicious. I would make this dish again, but I would cook the potatoes for a shorter amount of time.

This dish was absolutely delicious! The potatoes were perfectly crispy on the outside and fluffy on the inside, and the sauce was flavorful and savory. I added a little extra garlic and thyme, and it was perfect. I will definitely be making this dish
