Scalloped Cheese Breadfruit image

This is taken from a cookbook from Barbados. My old friend FBC has turned his nose up at this cookbook, even though he has never seen a copy, probably because it has not been approved by the food gurus of NYCity. Of course he lives in that culinary mecca, W. Lafayette, IN, so who am I to question his taste? He is missing out on recipes like this. You can also add a layer of cooked bacon slices if you wish.

I'm not a big fan of breadfruit, but I thought this dish was pretty good. The cheese sauce helped to mask the flavor of the breadfruit.

This dish is a great way to get your kids to eat their vegetables. The breadfruit is hidden in the cheese sauce, so they won't even know they're eating it.

I thought this dish was just okay. The breadfruit was a bit bland, and the cheese sauce was a bit too rich for my taste. I wouldn't make this dish again.

This was an interesting dish. The breadfruit had a unique texture that I wasn't used to, but it grew on me. The cheese sauce was delicious and helped to balance out the flavor of the breadfruit.
