Sesame Beet Salad image

One of my favorite salads from Moosewood cookbook. Easy if you use canned beets. I freeze my lemon juice in ice cube trays so I always have some on hand for this salad.

I'm not usually a fan of beets, but this salad changed my mind. The beets were roasted to perfection and had a slightly sweet flavor. The dressing was light and tangy, and the walnuts added a nice crunch.
