SHRIMP FRA DIAVOLO image

Number Of Ingredients 12

5 Tbs EVOO
1 Med Onion Chopped
3 Large garlic cloves, minced
1 Tbs Fresh Oregano, chopped
1/2 cup dry white wine
1 28oz can plum tomatoes, crushed by hand
1 tsp. Hot pepper flakes
1 lb linguine
2 lbs fresh shrimp
salt/pepper to taste
1 Tbs chopped parskey
Basil

Steps:

  • 1. Saute onion until it softens and colors. Stir in garlic and cook for 30-60 seconds. Add oregano and wine and cook over high heat to reduce the wine by 1/3. 2. Add the tomatoes to the onion mix. Add the hot pepper to taste. Cook over medium heat to reduce and thicken mixture, 15-20 minutes. 3. Add the shrimp to the sauce and cook for 2-3 minutes, until the shrimp is cooked but still tender. Season with salt and pepper. 4. Serve oveer the linguine and sprinkle with chopped parsley.
