Time 35m

Yield 12 muffins, 12 serving(s)

Number Of Ingredients 10

2 cups flour (I use white whole wheat)
1/3 cup sugar (I use evaporated cane juice for both sugars)
1/3 cup brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup milk (I use rice milk)
1/2 cup butter, melted
2 eggs, beaten
1 teaspoon vanilla extract
1 1/2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 400 degrees F and line a 12-cup muffin pan with paper cups, or grease the pan.
  • In a large bowl, combine all dry ingredients.
  • In another bowl, mix melted butter, beaten eggs, milk, and vanilla.
  • Pour the wet ingredients into the dry and mix until just combined.
  • Stir in chocolate chips.
  • Divide into 12 muffin cups.
  • Sprinkle a little granulated sugar on top of each muffin for a little sparkle and crunch (optional).
  • Bake at 400 for 15-20 minutes or until a toothpick inserted into middle of muffin comes out clean.

These muffins were a bit too dry for my taste, but they were still pretty good. I think I'll try adding a little bit of extra butter or oil next time.

I'm not a big fan of chocolate chip muffins, but these were actually really good. They were moist and flavorful, and the chocolate chips were perfectly melted.

I made these muffins with gluten-free flour and they turned out great! They were just as moist and fluffy as the regular muffins.

These muffins were a disaster! They were dry and crumbly, and the chocolate chips were burnt. I followed the recipe exactly, so I'm not sure what went wrong.

These muffins were a bit too sweet for my taste, but my kids loved them. They're also very easy to make, so I'll probably make them again for special occasions.
