Time 25m

Number Of Ingredients 6

2 c flour
1 c pecans, in pieces or walntes
1/4 c sugar
1 c butter, softened
1 tsp vanilla extract
powdered sugar

Steps:

  • 1. Heat oven to 325*f
  • 2. In a large mixing bowl combine all ingredients (except the powdered sugar)mix well on low speed for 2 to 3 minutes scraping the sides of the bowl several times.
  • 3. I spoon enough dough into my (clean) hands and roll into small balls.
  • 4. Place one inch apart on a non greased cookie sheet and bake for 18 to 25 minutes or a light golden brown on the bottom of cookie. These cookies break easy when hot so you have to be careful when checking.
  • 5. cool on a wire rack when cool roll in powdered sugar and then roll one more time after cookies are really cooled off. ENJOY

I'm not a big fan of coconut, but I decided to try these cookies anyway. I'm so glad I did! The coconut flavor is very subtle and it pairs perfectly with the white chocolate chips. These cookies are a new favorite of mine.

These cookies are so easy to make, even for a beginner baker like me. They turned out perfectly and they taste just like the ones my grandma used to make.
