South African Indian Butternut Stew image

This is very easy and cooking time is mostly simmering. This is a great way to use lamb but you could also use pork or beef. The flavors (hot and sweet)of this are just great. I got this from a cookbook " A Taste of South Africa"

I found that the stew was a bit too watery. I think I'll add less coconut milk next time.

This stew is a little too spicy for my taste. Next time I'll use less chili powder.

I'm not a huge fan of butternut squash, but this stew changed my mind. The spices and coconut milk really balance out the sweetness of the squash.

This dish is a great way to use up leftover butternut squash. I had some extra from making soup the other day, and this stew was the perfect way to use it up.

I love the vibrant colors of this stew! The orange from the butternut squash, the green from the spinach, and the red from the tomatoes make it a feast for the eyes as well as the palate.
