I love one-pot meals and this casserole is perfect. I just used one pan to cook the chorizo and eggs, and then I added the rest of the ingredients. It was so easy and cleanup was a breeze.

I love spicy food, so I added a few extra jalapeƱos to this casserole. It was the perfect amount of heat for me. I served it with a side of guacamole and it was divine.

I made this casserole without the chorizo and it was still amazing. I added some black beans and corn for extra flavor and it was a hit with my vegetarian friends.
