My sis-in-law, Karen, who is from Georgia swears by this yummy pie and I have to agree it is special. Just remember to only use Vidalia onions!! I'm actually surprised she gave me the recipe, it's been her secret recipe for awhile:) She must love me, lol.

Steps:
- 1. Heat oven to 350. Lightly spray a 9" pie pan w/ cooking spray. It's best to use a deep dish for this. In bowl, combine crushed crackers w/ 1/3 cup melted butter until crumbly. Press mix into bottom and up sides of pie pan.
- 2. In lg skillet, over med-high heat, saute onions in remaining butter until tender, stirring often. Pour onions into pie crust.
- 3. In another bowl, whisk together eggs, milk, salt and pepper. Pour over onions. Sprinkle cheese over top. Bake 45 mins or until center is set. You can cover w/ foil if cheese is browning too quick, but remove foil the last 10 mins. Cut into wedges.
