Southwestern Corn and Red Pepper Chowder image

Great hearty soup . . with fresh bread it's a meal in itself. The original recipe came from Keegan's, a local restaurant in Phoenix, however I've made modifications to it over the years. Lighter version can be made by cooking the potatoes in 2 1/4 cups broth.

This chowder is OK. It's not bad, but it's not great either. The flavors are a bit bland, and the texture is a little too thick. I think I'll try a different recipe next time.

I'm not a big fan of corn chowder, but this recipe changed my mind. The roasted red peppers and poblano peppers add a lot of flavor and depth. It's also very easy to make, which is a bonus.
