Steps:
- 1. First, cook macaroni. Bring 2 quarts salted water to a boil and stir in macaroni. Cook 10 minutes.
- 2. While pasta is cooking, place Velveeta cheese and evaporated milk in a microwave-safe 2-quart serving dish. Heat on high power 1 minute at a time, stirring until cheese melts and blends completely. It takes about 3 minutes.
- 3. Back to the pasta: After 10 minutes, add the peas and chopped spam to the macaroni and bring back to a boil. Continue to cook about 3 minutes, until macaroni is done to your liking. Drain well.
- 4. Stir macaroni into the cheese sauce, blending well. If desired, top with additional grated cheese and cover dish so cheese melts.
