Spam gets a bad rap. We find that some people are afraid to taste it, but when they do they actually like it. Spam is extremely popular in Hawaii and Stacey's salad recipe is a great way to try it. Number Of Ingredients 9

2 can(s) Spam, chopped or grated (12 oz each)
4-6 hard boiled eggs
3 celery stalks, chopped
3 carrots, grated
1/4 c onion
1/4 c dill relish
1/2 c grated cheese of your choice (i like sharp)
1 c mayonnaise, or more if you like.
salt & pepper to taste

Steps:

  • 1. Hard boil your eggs.
  • 2. While they are boiling, chop or grate the Spam, celery, carrot, onion and cheese into a large bowl.
  • 3. Add the chopped eggs, dill relish, mayo, salt, and pepper. Stir together and refrigerate.
  • 4. Great spread on wheat bread with crispy lettuce or on crackers for an appetizer.

I've made this salad several times and it's always a hit. I like to add a little bit of chopped walnuts for extra crunch. It's a great side dish for potlucks or picnics.
