Spanish Main Stuffed Poppers image

Shiver me timbers, mates! Barrels of Aborio Rice were plundered from an Italian trading vessel. One Eyed Jack, the ship's Spanish cook served these at Capt'n Morgan's table. They were so fine, the Capt'n rewarded him with a mug of his famous rum.

The poppers were a bit too greasy for my taste. I think I'll try baking them next time.

I'm not a huge fan of jalapeños, but these poppers were surprisingly good. The sweetness of the peppers balanced out the heat perfectly.

The jalapeños added a nice kick, but they weren't too spicy. The cream cheese and cheddar were a great combination.
