Spiced Peach Muffins image

These simple, quick cinnamon spiked peachy muffins are perfect warm with a bit of real whipped cream!

Number Of Ingredients 14

1/3 c butter, room temp
1 c sugar
2 eggs
1/3 c water
1/4 tsp almond extract
1 c fresh peaches, peeled and chopped
1 2/3 c flour
1 tsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
2 Tbsp brown sugar
2 Tbsp almonds or walnuts (optional)

Steps:

  • 1. Preheat oven to 350 degrees. Cream butter and sugar until light and fluffy, ~1 minute. Beat in eggs, water, and almond extract. Stir in peaches.
  • 2. Combine flour, baking powder, salt, baking powder, cinnamon, and nutmeg. Add to wet mix. Beat to thoroughly combine.
  • 3. Pour roughly 2/3 full into paper lined standard muffin cups. Divide and top with brown sugar (and nuts if you are using them).
  • 4. Bake 18 minutes or until just golden brown and slightly springy to the touch. Serve warm or cool on wire racks and serve room temp.
  • 5. Store covered and enjoy!!
