SPICED-UP, OVEN FRIED CHICKEN image

Number Of Ingredients 8

4 cups crushed plain cornflakes (from 8 cups whole cornflakes)
1 Tbs smoked paprika, to taste
2.5 tsp salt
1 tsp black pepper
3 eggs
1/2 c milk
3 chickens (3 to 3.5 lbs each), cut into 8 pieces each - I just use boneless breasts or whatever I have in the freezer
2 Tbs fresh parsley for garnish

Steps:

  • 1. Preheat oven to 350. Line 2 baking sheet with aluminum foil or spray with non-stick cooking spray 2. Combine crushed cornflakes in large bowl with paprika, salt, and pepper. 3. Lightly beat eggs with milk in a bowl. 4. Dip chicken in egg mixture, shake off excess, then into crumbs, coating well. Place on baking sheets, leaving space between pieces. 5. Bake, in batches, for 1 hour or until golden brown and cooked through. 6. To serve, arrange chicken on large tray and sprinkle with parsley
