You should have about 1/2 cup Drain on paper towels 4. In a large mixing bowl, combine sour cream, yogurt, chipotles, jalapeño, mustard, olive oil, lemon juice, salt and pepper until fully incorporated Add the potatoes, eggs, sausage, chopped red onions, celery and shallots, then toss gently Garnish with chopped green onions or chives Cover and refrigerate until needed
