SPINACH CHEESE SQUARES image

Yield 16 squares

Number Of Ingredients 12

2- 10oz pkgs. frozen spinach
(defrosted, drained, and squeezed dry)
3 eggs
1 C. milk
1 C. flour
1 tsp. salt
1 tsp. baking powder
1/8 tsp. cayenne
dash of nutmeg (optional)
16oz pkg shredded monterey jack
2 Tbsp. melted butter
Cooking oil spray

Steps:

  • Preheat oven to 350 spray a 9x13x2 baking pan Thaw spinach,squeeze out as much moisture as possible; set aside in a colander. Spinach will be compressed from squeezing dry. Make certain to loosen up the clumps of spinach before incorporating into the egg batter. In a large bowl; combine flour, salt, and baking powder. In a seperate medium sized bowl; beat eggs, milk, and spices. Gradually, add the beaten egg mixture into the dry ingredients stirring the whole time, getting most of any flour lumps. (mixture will remain sort of lumpy) Add spinach mix in just until combined. ( do not over beat) Pour into prepared pan and bake for 30-35 minutes. Cool in pan; cut into squares.
