1 lb fresh spinach, washed, stems removed, and torn into bite-sized pieces
1/2 cup chopped walnuts
3/4 cup dried cranberries (craisins)
2/3 cup extra virgin olive oil
1/3 cup balsamic vinegar
1 garlic clove, minced
3/4 tablespoon kosher salt
1/2 teaspoon fresh coarse ground black pepper

Steps:

  • In a serving bowl, toss together the salad ingredients.
  • In a jar with a tight fitting lid, shake together the dressing ingredients until well blended.
  • Dress the salad and serve.
