Steps:
- In a small dry skillet, toast pecans over low heat, stirring often, until fragrant, 2-3 minutes. Set aside.
- Heat oil over med-low heat. Cook shallot, stirring until softened, about 4 minutes.
- Add vinegar & maple syrup and bring to boil. Add salt & pepper.
- Pour warm dressing over spinach. Toss & sprinkle with cheese & nuts.
