Spinach Salad with Warm Maple Dressing image

Number Of Ingredients 8

2 tablespoons Chopped pecans
1 bag 10 ounce baby spinach
2 teaspoons Olive Oil
1 Shallot
1/4 cup Apple Cider Vinegar
2 tablespoons Maple Syrup
1 dash Salt & Pepper
1/4 cup Shredded Smoked Gouda

Steps:

  • In a small dry skillet, toast pecans over low heat, stirring often, until fragrant, 2-3 minutes. Set aside.
  • Heat oil over med-low heat. Cook shallot, stirring until softened, about 4 minutes.
  • Add vinegar & maple syrup and bring to boil. Add salt & pepper.
  • Pour warm dressing over spinach. Toss & sprinkle with cheese & nuts.
