I got this recipe years ago from a friend of the family and replaced ground beef with ground chicken. It's a good way to get kids to eat spinach. It is very comforting. Tastes great with some garlic bread and salad :) The photo shows it with beef..which is delicious.

This was my first time making a spinach chicken macaroni bake and it was a bit of a disaster. The sauce was too thin and the chicken was dry. I think I'll stick to my old standby recipe next time.

This dish was a bit too cheesy for my taste. I think I'll try using less cheese next time or maybe even omitting it altogether.
