Squash Casserole image

This was my Aunt's mother-in-law's recipe and a favorite at Thanksgiving.

Number Of Ingredients 7

6 large yellow squash, sliced
1 medium onion, chopped
1/2 stick butter, melted
1/2 c milk
1 1/2 tube(s) ritz crackers
1 1/2 c shredded cheddar cheese
2 eggs

Steps:

  • 1. Boil or steam the squash until tender. (about 5 minutes)
  • 2. Meanwhile, saute the onion in 1 Tbsp. butter.
  • 3. Crush 1/2 a sleeve of the crackers. Mix crushed crackers, milk and eggs well.
  • 4. Add the cooked squash, onion and 2 Tbsp. butter. Mix well.
  • 5. Add 1 cup cheese. Mix.
  • 6. Crush the remaining sleeve of cracker. Saute them in a Tbsp of butter.
  • 7. Place squash mixture into a baking dish. Put sauteed crackers on top of that. Place 1,2 cup cheese evenly over top
  • 8. Bake at 350 degrees for 40 minutes.
