Stir & Drop Oatmeal Cookies image

This recipe was originally found in the Betty Crocker New Boys & Girls Cookbook, and is the first I ever made outside my mom's kitchen. I added the coconut and nuts for variety when I made these for college friends. Although the recipe calls for greasing the baking sheet, in 37 years of baking I have never done this for cookies...

1 c flour
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp ginger
1 c brown sugar
1 c rolled oats
1/4 c vegetable oil
2 Tbsp milk
1 egg
3/4 c chopped nuts or coconut, optional

Steps:

  • 1. Heat oven to 375 degrees. Grease baking sheet.
  • 2. Stir flour, baking powder, cinnamon, salt, and ginger together in bowl.
  • 3. Mix in sugar and oats.
  • 4. Mix in vegetable oil, milk, and egg.
  • 5. Add nuts or coconut if desired.
  • 6. Drop by rounded teaspoonfuls about 2 inches apart on baking sheet.
  • 7. Bake 10 minutes.
