Stuffed Cubanelle Peppers image

This recipe is a favorite of my daughter Natasha, I make it with ground turkey...but you can also make with ground chicken, pork or beef.

4 cubanelle peppers
2 lb ground turkey or chicken
1 small finely diced onion
2 clove smashed garlic
2 Tbsp olive oil
16 c tomato sauce
8 oz can of chopped tomatoes
1 sprig(s) cilantro
1 sprig(s) parsley
1/2 tsp salt
1 c white wine

Steps:

  • 1. cut peppers in half, the long way, take out seeds.
  • 2. in a bowl mix together the ground turkey or chicken with the onions,garlic & salt
  • 3. stuff the peppers, in a large wide pot, put the tomato sauce and half the can of chopped tomatoes & the white wine, place the peppers on top of the sauce and simmer for about an hour...basting the peppers every 15 mins with the sauce... add in chopped cilantro & parsley..
