Swedish Dried Fruit Cream image

This recipe was found in the 1973 cookbook, Scandinavian Cooking. Preparation time does not include time needed to chill.

Number Of Ingredients 6

1 (12 ounce) package mixed dried fruit
4 cups water
2 tablespoons granulated sugar
1/2 teaspoon ground mace
2 tablespoons cornstarch
3 tablespoons water

Steps:

  • In a small saucepan, simmer fruit in water until tender, about 15 minutes.
  • Stir in sugar & mace.
  • Mix cornstarch with cold water, then add it to the fruit mixture.
  • Cook over medium heat until thickened, stirring constantly, but carefully to avoid breaking up the fruit.
  • Chill for at least 1 hour before serving cold, as is; with cream; or over a custard or pudding.
