Swedish Pot Roast image

I found this in the booklet that came with my pressure cooker 34 years ago. I've made it more times than I can count and we always love it.

Number Of Ingredients 14

3 lb beef chuck roast
1 tsp nutmeg
1 tsp cinnamon
1/2 tsp ginger
1/8 tsp black pepper
2 tsp salt
2 Tbsp vegetable oil
4 bay leaves
2 medium onions, sliced
1 clove garlic, chopped
1/2 c brown sugar
1/2 c red wine
1 c water
cornstarch, for thickening

Steps:

  • 1. Blend nutmeg, cinnamon, ginger, salt, and pepper together and rub over entire roast.
  • 2. Brown the meat on all sides in the oil at medium-high heat.
  • 3. Add all remaining ingredients(except cornstarch)to the pot. If using a pressure cooker,cook for 35 minutes after pressure builds. If cooking on top of the stove,cover and simmer for about 4 hours until very tender. Remove the meat and bay leaves from the pot and thicken the gravy with some cornstarch mixed in a small amount of water.
  • 4. I serve this with wide noodles.
