I love cucumbers and vinegar and this is just one of the many ways I like to make it. It's a very refreshing way to start a summer meal.

Steps:
- 1. Whisk sugar, hot water, vinegar, salt and black pepper in a bowl until sugar has dissolved.
- 2. Add the cucumber, onion and cilantro into the vinegar mixture and stir well.
- 3. Refrigerate at least 1 hour.
- 4. Sprinkle with crushed red pepper flakes just before serving.
