SWEET 'N SOUR ONIONS image

1/2 cup olive oil
2 lbs. onions cut into wedges
1 1/2 cups sugar
1 cup red wine vinegar (balsamic is too strong)
1/4 cup catsup
2 tablespoons salt
2 teaspoons red pepper flakes (or less to control spiciness)
fresh ground pepper

Steps:

  • Heat olive oil in a large saucepan. Add onions and cook until tender, stirring occasionally, about 15 minutes. Add the rest of the ingredients. Simmer about 3 minutes.
