Time 1h30m

Yield 4 servings

3 tablespoons butter or vegetable oil
2 tablespoons good-quality wine vinegar
1 1/2 teaspoons sugar
Salt and freshly ground black pepper

Steps:

  • Place pan over medium heat for about 20 minutes, turning onions occasionally. Add a little water if pan begins to run dry.
  • Add vinegar, sugar and salt and pepper to taste. Turn onions again, and reduce heat to low. Continue to cook for 1 hour or more, turning onions occasionally, and adding a tablespoon or two of water whenever necessary. Onions are done when they are a rich, dark, golden brown all over, and are easily pierced when prodded with a fork. Serve hot, with pan juices.

SWEET-AND-SOUR ONIONS

Sweet-and-Sour Onions image

Categories     Onion     Appetizer     Side     Bon Appétit     Vegan     Vegetarian     Pescatarian     Dairy Free     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     Kosher

Yield Makes 6 servings

Number Of Ingredients 11

1 1/2 cups dry white wine
1 1/2 cups distilled white vinegar
1 cup balsamic vinegar
1 cup sugar
5 tablespoons olive oil
1 large garlic clove, peeled, crushed
10 whole cloves
2 bay leaves
1 1/2 cups fresh whole basil leaves
1 1/2 teaspoons whole black peppercorns
2 pounds small cipolline onions or small boiling onions, blanched, peeled

Steps:

  • Place all ingredients except onions in heavy large pot. Bring to boil over high heat. Add onions; reduce heat to medium and simmer until crisp-tender, about 10 minutes. Using slotted spoon, transfer onions to jar with lid. Increase heat to high and boil until liquid is reduced to 1 3/4 cups, about 20 minutes. Pour liquid over onions and cool.
  • Cover onion mixture and refrigerate until flavors blend, at least 1 week and up to 1 month.

Tips:

  • Choose the right onions: Yellow or white onions are best for this recipe, as they have a mild flavor that will allow the other ingredients to shine through.
  • Slice the onions thinly: This will help them cook evenly and absorb the flavors of the sauce more easily.
  • Don't overcrowd the pan: If you overcrowd the pan, the onions will steam instead of fry, which will make them soggy.
  • Cook the onions over medium heat: This will help them caramelize slowly and develop a deep, rich flavor.
  • Don't stir the onions too often: Stirring the onions too often will prevent them from caramelizing properly.
  • Add the sauce ingredients towards the end of cooking: This will help prevent the sauce from burning.
  • Serve the onions immediately: Sweet and sour onions are best served immediately, while they are still hot and crispy.

Conclusion:

Sweet and sour onions are a delicious and versatile dish that can be enjoyed as an appetizer, side dish, or main course. They are easy to make and can be tailored to your own taste preferences. Whether you like them sweet, sour, or somewhere in between, these onions are sure to please. So next time you're looking for a quick and easy dish to make, give sweet and sour onions a try. You won't be disappointed!
