SWEET POTATO CURRY QUICHE image

Number Of Ingredients 8

4 cups shredded sweet potatos
1 cup grated onions
1 cup plain greek style yogurt
4 tbsp madras curry powder
2 tbsp chipotle chili powder
1/4 c chopped fresh cilantro
salt to taste
8 beaten eggs

Steps:

  • mix all ingredients up to salt together add in eggs pour into 9 inch pie pan or into mini muffin pan bake at 350 degrees until brown on top and eggs are set (approx 40 minutes for pie size)
