SWEET POTATO HASH WITH POACHED EGGS image

For the Hash:
1 strip bacon, cut into 1/4 inch pieces
1 medium onion, cut unto 1/2 inch pieces
1 cooked medium sweet potato, cut into 1/2 inch pieces
1/2 red bell pepper, cut into 1/2 inch pieces
2 precooked chicken sausages, cut into 1/2 inch pieces
1 clove garlic, minced
1 Tablespoon chopped fresh thyme
For poached eggs:
1/2 tsp salt
1 tablespoon white vinegar
4 eggs
Salt and Pepper to taste
2 tablespoons chopped parsley

Steps:

  • In a large nonstick pan, cook bacon until crisp. Using a slotted spoon, remove bacon to a paper towel to drain, leaving drippings in pan. Add onion, sweet potatoes, bell pper and sausages to pan and cook over medium heat, turning frequently until onions are golden brown, about 5 minutes. Add garlic and thyme and cook for 1 or 2 minutes longer. Cover the hash mixture and set aside. I am ommiting the instructions for poaching the eggs because I know how! Spoon 1/4 of the hash mixture onto each of 4 plates,making a slight indentation in the middle. Using a slotted spoon, remove an egg, let it drain, then place on top of hash, Sprinkle with salt and pepper. Garnish with parsley. 292 calories per serving
