Sweet Potato Salad image

Here in Louisiana sweet potatoes are called "Yams". You can serve this hearty potato salad all year-round. It's a wonderful accompaniment to ham or pork and makes an easy-to-serve addition to a buffet table.

Number Of Ingredients 7

3 lb sweet potatoes, cooked, peeled and cubed
1 c chopped sweet red pepper
1/2 c chopped onion
1 1/4 c mayonnaise
1 1/2 tsp salt
1/2 tsp pepper
1/4 tsp hot pepper sauce

Steps:

  • 1. In a large bowl, toss sweet potatoes, red pepper and onion. In a small bowl, blend remaining ingredients; add to potato mixture and toss to coat. Chill. If you're not use to hot pepper sauce, add a little bit at a time to check for strength.
